
MY PLANT BASED WEEKEND PIZZA.


Pizza for 2 or More.
2 pieces of pita bread (Your choice ).
Tomato paste pizza sauce (garlic and herbs).
Slice up 1 eggplant , 1 zucchini and 1 red capsicum.
Pan oil fry using olive oil and all 3 ingredients and then put aside to cool down.
Kalamata olives (no pips).
Spinach and Kale.
1/2 sliced red onion.
Oregano.
Bio dairy free pizza cheese.
Time to put it together.
Pre heat oven at 200 degrees.
Layer the pita bread with the tomato paste.
Sprinkle a little cheese over sauce.
Then add egg plant, zucchini and capsicum.
Add your onion, olives, spinach and kale .
Sprinkle a little oregano .
And lastly sprinkle some cheese on top.
Place in oven and cook for 10 -15 minutes.
*Add as much topping as you prefer and of course double up on everything if for more servings
